No Tubing = More Shopping!

Today was a bust on the tubing because it wasn't hot enough. It got up to about 22C, but if you stood in the shade, it was pretty cool. So just trying to imagine - if you will - sitting in a tube, in cold water, for about 3-4 hours. It didn't seem like it was going to be extremely enjoyable! I still want to go one day - but like I said in a previous post - the weather has just been so ... mild.

Instead, I went shopping with a friend and found some great items for my fall "wardrobe". I also splurged on a 4-in-1 grill. It's a sandwich maker/waffle maker/grill press/griddle. Excellent. I only have plans for the waffle and sandwich maker at this point in time - heck, even a 2-in-1 would still be amazing, and I would have purchased it, so the other 2 are a total bonus!


I also looked at some P&S cameras to replace the one I have that has been broken for a year. I miss it, and I know it would be simple to drop it off and have it fixed - but I think I deserve something new. I didn't commit and buy anything just yet, I think I'm going to wait one more month, and see if prices go down for the fall - you never know!

Well, other then that, I had an amazing day hanging out with a good friend, and I am in a feel good mood! So, here is some feel good music:

What's for dinner?

Yesterday I made a quiche! I've only ever made small ones - tart sized. This time, I made my very first family sized quiche - 2 of them actually! I got the inspiration from one of my favorite food websites HERE. I think that everyone should know about this site. It's awesome, and always inspires me to try something new!!

I've never made pie crust from scratch before, and to be honest- I was nervous... So I bought a brick of pastry lard (that sounds gross... shortening in other words) and just followed the recipe on the back. It was actually really easy - even Mikey helped me! I made my crust the night before so that I could refrigerated it over night, and roll it the next day before dinner. The pastry recipe made enough for two quiches, and I added local bacon, mushrooms, cheese, and humongous green onions from the garden!


I'm so impressed with myself, because not only did I make a quiche (two) but it tasted SO GOOD!!! One is already gone! I had a little bit of dough left over from cutting the crust, so I rolled it out and cut it into 4 equal pieces. I put them into these little mini dishes I have, and lightly filled them with some raspberries I picked from the garden earlier in the day, some frozen blueberries, a drizzle of real maple syrup, a teaspoon of local honey, and a pinch of light brown sugar! Mmmm, they were REALLY good! I didnt know if i was going to get a picture, cause I just wanted to gobble it down!

Potato Chip Chicken

I'll admit it! We've been a bit lazy on the grocery shopping and got low on food, so I've been getting a bit creative and stretching anything that I can hold on to as leftovers for the next meal. Not the weekend that just passed, but the weekend before, Mikey bought a big bag of ketchup chips that Ashley and I devoured except all the broken pieces in the bottom. I held onto the bag until I figured out what to do with them.

So today, I decided to use the leftover ketchup chips as part of a "batter" on some chicken thighs I was going to cook up on the BBQ! I put the chips into a large zip lock bag, and made sure they were all crushed very small. I added some bread crumbs to make sure I had enough to cover all the chicken. I dipped all the chicken into a beaten egg, and then placed all pieces into the bag of chips, and shook.

As the chicken cooked on low, I boiled up some sweet potatoes that I had chopped up and put in the freezer a month or two ago. Mikey made a Caesar salad, and we went outside to eat! (YAY, SUMMER IS ALMOST HERE!!!) Mikey also mentioned that it would be good with a BBQ chips, and I thought it would be yummy with a Doritos! Looks like we have a lot of experimenting to do! So here it is:
